Ottogi Korean Curry

Description

How to make Korean curry using Ottogi curry powder

Ingredients

  • 450g (1 lb) chicken breast or thighs, cut into cubes
  • 3 medium onions (300 g)
  • 4 small yellow potatoes (250 g)
  • 3 carrots (200 g)
  • 50 g Ottogi curry powder
    • Note: The package tells you to use a lot of curry powder. I find 50g is more than enough.
  • 3 cups water

Note: you can also add other vegetables if you like!

Instructions

  1. Begin by searing the chicken in a large pot.  When it is cooked (~5 minutes each side), remove it.
  2. Add a bit more oil and sear the onions for about 3 - 5 minutes in the same pot. Remove 80% of the onions and set aside.
  3. Add the carrots and fry for around 2 minutes.
  4. If needed, add water to deglaze the pan. Add the 3 cups of water.
  5. Add the curry powder and potatoes. Mix well.
  6. Simmer on a medium for around 10 minutes.
  7. Add back the onions and chicken and simmer on low for another 10 minutes.
  8. Enjoy!
