For the dressing:
- 4 tbsp rice vinegar
- 2 tbsp sugar
- pinch of salt
- a splash of soy sauce
For the Sunomono:
- Cucumbers (usually either 4-6 Persian/mini cucumbers or 1-2 English/large cucumbers)
- sesame seeds (garnish as desired)
Thinly slice the cucumbers. Salt lightly and let sit for 15-30 mins to draw out moisture. Squeeze the cucumber slices as best as you can.
Combine all of the ingredients for the dressing in a bowl. Add cucumber slices and mix well. Let sit in the refrigerator for a few hours to marinate for best flavor.
