You will also need an instant pot of course! I am using a 6 quart one.
You can also use other types of potatoes.
Instructions
Begin by peeling the potatoes and cutting them into approximately 1 inch cubes. Give it a quick rinse under cold water.
In a 6 quart instant pot, place 2 cups (500mL) of cold water. In a basket, place your potatoes.
Cook on high pressure for 10 minutes. Release the pressure right when the timer is up.
Drain the water from the instant pot and add back the potatoes after.
Optional - Add 1 tablespoon of oil or butter and add some chives or green onions.
Add 3/4 cup to 1 cup of liquid. You can choose a mixture of milk, water, or heavy cream depending on your preference. I like to add 1/2 cup of water and 1/4 cup of milk. Add less liquid if you like your mashed potatoes thicker.
Season with salt and black pepper to taste.
Mash and enjoy!
Note: If you don't have a basket, you can add less water (1 cup to 1 1/2 cup) and skip draining the water.
