Ingredients
Egg Mixture:
7 Large Eggs
1/4 cup (60 mL) milk
80 grams of breakfast sausage
50 grams of spinach
50 grams of onion
50 grams of cheese (I used 1 slice of kraft cheese cut into 12 pieces); feel free to use real cheese! :D
50 grams of bell pepper
Cut your ingredients into small pieces. Feel free to substitute any ingredients or forgo the meat. For example, you may want to use egg whites instead of whole eggs.
You will also need a muffin tray. I'm using a Nordic Ware muffin tray (link) which has dimension of 2.25 inch (diameter) and 1.3 inch deep.
Instructions
Preheat your oven to 375 F.
Prepare your vegetables, cutting them into small pieces.
Cook your breakfast sausage and cut into small pieces.
Add your ingredients to the muffin tray, starting with the dry ingredients first! For example, add onion, bell pepper, breakfast sausage, and then spinach.
Mix the ingredients for the egg mixture and add a pinch of black pepper. Pour the egg mixture into the muffin tray to just cover the dry ingredients.
Cook at 375 F for 20 minutes.
Rest for 5 minutes and enjoy!
This is a healthy meal that can also be frozen and reheated! You can also enjoy it on an English Muffin.
