Easy Chicken Picatta

Description

A delicious and healthy Italian chicken dish

Ingredients

  • 2 boneless and skinless chicken breasts, cut in half horizontally (300-400g); you should have 4 pieces
  • 2 tablespoons olive oil
  • ~1 cup of flour
  • Salt + Pepper
  • Chopped parsley (as garnish)
  • Sauce:
    • 3 cloves of garlic (finely minced)
    • The juice of 1 lemon
    • 2 tablespoons capers
    • 1 cup chicken broth

Instructions

  1. Add some salt and pepper to the chicken and coat the chicken breasts with a thin layer of flour.
  2. Heat a large pan over medium-high heat and add the olive oil.  Add the chicken and sear for around 5-7 minutes on each side, depending on how thick they are. Remove the chicken and place aside once cooked.
  3. Add the sauce ingredients into the same pan and simmer for about 3 minutes.  Simmer longer for a thicker sauce, or add more water if you want a thinner sauce.
  4. Add back the chicken into the sauce. Top with parsley and enjoy!

Finished dish! Serve with mashed potatoes and a slice of lemon for that gourmet touch!
