Description
A classic and easy to cook Chinese dish
Ingredients
2 tomatoes, chopped roughly
3 - 5 eggs
Depending on how much egg you want, adjust as you like. 4 eggs is a good choice.
Green onions, sliced, around 1 handful
2 tablespoon ketchup
1 teaspoon sugar
Spam, cut into cubes
This is optional. If you don't want to use Spam, skip this ingredient and the steps with Spam.
Cornstarch slurry
Mix in a 1:2 ratio of cornstarch:water
Instructions
Heat a pan over medium heat, add some oil, and cook approximately half a handful of chopped green onions in the pan for around 1 - 2 minutes. You can use the white parts here.
In another pan, fry your spam.
Add your tomatoes and crush them while frying them. Keep cooking until it becomes a sauce like consistency. This will take around 5 - 7 minutes.
When the sauce is relatively smooth, add 2 tablespoon ketchup and 1 teaspoon sugar. Add more sugar if you like it sweeter.
Add about a 2 teaspoons of the cornstarch slurry. Cook until the sauce is thickened (should be around the consistency of ketchup). Turn off the heat. Add the spam to the mixture.
Beat your eggs and cook them scramble style until they are just runny. Add them to the tomato mixture and fold in.
Top with the rest of your green onions!
