Chicken Teriyaki with vegetables

Description

A healthy and easy chicken teriyaki recipe

Ingredients

  • 2 chicken breasts (or 2 - 3 chicken thighs) cut into cubes
  • 3 carrots, sliced lengthwise thinly
  • 3 small white onions, sliced
  • Handful of green onions
  • Sesame seeds
  • Sesame oil
  • Any other vegetables as you desire. I find zuchinni, mushrooms, bell peppers, and broccoli work well.
  • Teriyaki Sauce Marinade
    • 1 tablespoon light soy sauce
    • 1 tablespoon dark soy sauce
    • 1 tablespoon brown sugar
    • 1/2 tablespoon oyster sauce
    • 1 tablespoon Chinese (Shaoxing) wine
    • 1/2 teaspoon ground ginger (or 1 teaspoon fresh ginger)
    • 1/2 teaspoon black pepper
    • [Optional] Dash of red pepper flakes

Instructions

  1. Combine all the ingredients for the Teriyaki Sauce Marinade. Coat the chicken in the marinade. Marinade for 1 hour for best results. It is fine to cook the chicken right away however (no waiting needed). Do not marinade for more than 24 hours as the chicken will become quite salty.
  2. Add some cooking oil into your pan and fry your vegetables. I fry the carrots first, then the broccoli and then the onions. Fry until cooked. Remove from heat and place aside.
  3. Fry the chicken on high heat until cooked. This will take around 8 to 12 minutes.
  4. Once the chicken is cooked, add back the vegetables into the pan.
  5. Top with green onions, sesame seeds, and sesame oil.
  6. Enjoy!
